Hitachi White #1 Steel and soft iron cladding, forged by Satoshi Nakagawa, one of Sakai City's busiest and most well regarded blacksmiths. Nakagawa-san rose to fame as the protégé of the great Kenichi Shiraki, and in more recent years has taken up the mantle of this esteemed blacksmithing workshop. Nakagawa-san has honed his skills to be able to work with a wide range of steels, profiles and constructions - and has earned his well deserved reputation for forging and heat treating top quality blades.

The grind and finish of this Gyuto has been executed with a great degree of finesse by the legendary Kawakita Hamono, one of the most sought after sharpening workshops in Sakai.

Both makers in collaboration have created a blade which performs effortlessly. The grind features a convexity that starts about halfway up the blade and seamlessly tapers towards the thin cutting edge. The outcome is a smooth performer that is very thin behind the edge yet has the adequate geometry to offer a good degree of food separation and release. A Gyuto that is on the larger side with the capability of processing a variety of ingredients, yet well balanced and very wieldable for delicate cuts. A beautiful Kasumi finish on the blade, paired with a Rosewood handle results in a rather elegant kitchen tool. Nakagawa-san's White #1 core is very responsive on the stones, and can be easily sharpened to a highly refined edge that holds its bite very well.

Awesome gyuto

This might be the best gyuto I have ever used, and I have owned or used many of the most well known. The blade is middleweight, but it somehow has the confidence of a workhorse and the performance of a laser. The grind is excellent: thin behind the edge but not fragile, thin tip, good food release. Profile has a nice curve into a nice flat spot at the heel. Feels perfectly balanced to my taste. Excellent fit and finish. Just the perfect all-around gyuto. I can't say enough good about it.

I liked it so much that I bought the 240mm version of the gyuto, the 270mm and 300mm sujihikis, and the 150mm petty. I'm a big fan of the Nakagawa x Kawakita combination. All are excellent.

For full disclosure, I bought this 270 mm gyuto secondhand but in new condition from someone.

Lovely knife

Looks big, but it feels comfortable and nimble in hand. Lee puts a really great edge on it! Don't have much to say, other than I really enjoy using the knife!

Well done

In hand it's got the feel of a good balanced medium weight Gyuto but once you start cutting with it, it turns into a very precise laser. I really haven't had it long enough to comment on the steel but the grind is incredible.

It was shipped the day I ordered, great service.

Very impressive

I was a bit nervous to try new brands, but having no regrets at all now. I cooked 4 meals with this knife already the cutting was superb!! Super sharp. Fast delivery and good contact. 5 star!

This is THE knife!

The is the knife you want. It certainly has some weight to it, but the grind is so incredibly thin behind the edge that it just glides through everything I have thrown at it. I have been happy with each of my Migoto purchases but this one stands head and shoulders above most Japanese knives in my kitchen. Highest recommendations.
