Wrought iron and Hitachi White #1 Sanmai by Brook Turner from Sydney, Australia. Full time radiographer, and part time knife maker. Brook has worked with a variety of steels and materials to create many different blade profiles in different constructions. The quality of his work would suggest that he has been forging and grinding knives full time for many years. An accomplished bladesmith and woodworker with a great eye for aesthetics.
A classic forged scale wide bevel Sujihiki with tall bevels that are blended in to the scale with minimal ridges. It has a little more convexity behind the edge compared to Brook's typical Gyuto bevel geometry. A well rounded Sujihiki that will excel at both mass protein portioning and delicate slicing. The bevels have a simple loose abrasive finish that will take a fast and even patina.
