Wrought iron and Hitachi White #1 sanmai by Brook Turner from Sydney, Australia.
A Nakiri with a semi integral bolster, forged fullers and stone shaped bevels. Instead of a regular flat edge profile, this one has a very subtle curvature similar to a cleaver where the middle is the tallest section of the blade.
The forged fullers contribute a bit of release, and the presence of the semi bolster centres balance and keeps the fingers comfortable. Heirloom fitted burl scales and dark rivets round off this gorgeous piece.
Edge geometry is whisper thin after stone work sessions and the bevels can be fully maintained on a finisher. Recommended stroke direction is parallel to the profile.
