Wrought iron and Hitachi White #1 Sanmai by Brook Turner from Sydney, Australia. Full time radiographer, and part time knife maker. Brook has worked with a variety of steels and materials to create many different blade profiles in different constructions. The quality of his work would suggest that he has been forging and grinding knives full time for many years. An accomplished bladesmith and woodworker with a great eye for aesthetics.
A newer style that Brook has been playing around with in recent months. Using some custom dies that he machined for his forging press, this Gyuto has a subtle hollow forged geometry. The slight hollows run from heel to tip on both sides, and sit around the mid section of the blade. In combination with the brushed nashiji, this blade has nice food release.
The forged shape also keeps the ground bevels as low riders, with a fairly straight shinogi that will also be easy to keep even for years. If you are a certain kind of masochist, you might be pleased to know that this blade has the ideal geometry, bevel width and taper for bench stone work.
As with all of Brook's knives, this one offers great cutting performance and comfort. The bevels have a simple loose abrasive finish that will take a fast and even patina.
