Brut de Forge gyuto in 1084 steel by Melbourne's own Aidan de Fazio. Aidan began making knives when he was just 12 years old. Still only 18 years of age, he has spent a lot of his teenage years mastering the skills of a bladesmith, amassing knowledge, tools and equipment. Proficient in various styles and constructions of kitchen and outdoor knives, he is definitely one to keep an eye on.

I met Aidan for the first time a few months ago. Although he is young enough to be my son, I felt he his demeanour be rather mature and reserved. His work is a reflection of his personality, and is highly developed even in relation to seasoned makers. His kitchen knives are meticulously thought out and displays both talent and restraint.

This gyuto is an impressive performer, with a thicker spine over the heel to allow for a nice distal taper. Substantial height to accommodate the extra mass on the spine and acute grind down to a thin edge. An edge profile with a gradual curvature to suit a variety of ingredients and cutting styles. Complete stiffness and a comfortably contoured neck area. The bevels have a clean satin finish to contrast the hand hammered forge scale. The crisp 1084 shows that basic steels can still have high end performance as long as they are heat treated well.
