Kippington Blades is a small workshop based in Melbourne ran by former chef Julian Hoh. Over the years, Jules has become known among enthusiasts for how his grinds function in the kitchen. Predominantly working with mono steel, his knives have a performance focused character.
This gyuto is made with 52100, and features his own Work-pony (medium thickness) grind. It has a convex geometry tuned for a right hander, and a well formed distal taper for a thin tip section, complementing the gradual curve of the edge profile. In hand it feels well balanced, ergonomic and is made to be a daily driver.
The handle is sealed with beeswax.
