Hitachi Gingami #3 forge welded between soft stainless steel by Satoshi Nakagawa. Grinding by the famed Kawakita Hamono.

A collaboration between a highly regarded blacksmith and sharpener, this work features a well balanced convex grind leading to a thin edge with good heel height - making this gyuto is a great all rounder for a wide variety of tasks.

The upper part of the blade is satin finished while the lower end has a hazy finish, creating a simple and timeless aesthetic. Being all stainless, this gyuto is rather easy to care for, while still being capable of taking a very refined edge.

Migoto Gin 3

Great knife, I was looking for a stainless knife that I could use in every day cooking, without needing the attention a carbon one does. And this one ticks all the boxes. There are alot of variations in Nakagawa forged Gin 3 knives, and this one was the tallest I found, above 50mm simply feels better in hand to me.
The edge, which I assume was done by Migoto hasnt needed any sort of sharpening so far, but I have been told it is really nice on the stones.
10/10 would recommend.

Perfection

This is about as close to a "perfect knife" as I have ever tried. Profile is fantastic and its incredibly thin behind the edge. Light, nimble and ghosts veg like nothing is there.

Awesome Blade!

I got the knife two weeks ago and used nothing else since then. The profile is perfect for me and the edition of the few extra mm at the heel makes everything much more enjoyable to use. I’m very surprised by the edge retention, I haven’t touched the edge yet and it’s nice and toothy. I’m more of a convex grind guy but love the wide bevel look so it’s best of both worlds here. Very happy with this purchase I’d recommend it to anyone I know.
