Forged Hitachi White 2 and soft iron. With an obtuse bevel on the right side, and a left sided concave. These are suitable for right handed users only.
Honesuki were originally developed as boning knives for poultry. They can also excel at breaking down other small carcasses such as rabbit and certain species of fish.
The neck line on these has been contoured slightly more into the right side of the blade for an added degree of comfort. Paired with a lightweight mono timber handle for nice balance. A simple wa Honesuki at a great price.
