Hitachi Blue #1 core laminated with soft iron damascus, forged by Satoshi Nakagawa. 

The 4th iteration of this series of knives. This time they are made with a more exaggerated geometry, more notable distal taper and thinner behind the edge. 

The cutting feel of this gyuto is closer to a full convex ground blade rather than a shinogi/wide bevel. You do feel a slight ridge where the polished area meets the kurouchi. But as the grind has been taken higher up, it has a somewhat more acute feel than a regular shinogi ground kurouchi blade.

Compared to previously released gyuto series from Nakagawa-san, the edge profile on these has a little less curvature - making the tip slightly lower for a pointier feel.

The kurouchi is leftover blacksmith's scale rather than a coating.

A great kitchen all rounder in a style that is a little different from typical Sakai made double bevels. Full credit to these two incredible makers for bringing this idea to life.

Beautiful knife

This knife has impeccable fit and finish. It’s heavier than most of my Japanese knives but just falls through produce and has great food separation. Quick shipping with great customer service. Will buy from them again.
