Hitachi Blue #2 core steel forge welded in between soft iron cladding. The rustic Kurouchi finish is leftover scale from forging the blade, rather than oxides from heat treatment or a parkerising process. Crafted by a very reputable blacksmith and sharpener, this gyuto has a sturdy spine, sufficient heel height, slight forward balance and a thin edge - making it a great mid weight workhorse.
