Hitachi Blue #2 Steel and soft iron cladding, forged by Satoshi Nakagawa, one of Sakai City's busiest and most well regarded blacksmiths. Nakagawa-san rose to fame as the protégé of the great Kenichi Shiraki, and in more recent years has taken up the mantle of this esteemed blacksmithing workshop. Nakagawa-san has honed his skills to be able to work with a wide range of steels, profiles and constructions - and has earned his well deserved reputation for forging and heat treating top quality blades.
The sharpener for this petty is none other than Shotaro Nomura. Currently in his 80s, Nomura-san's work for both single and double bevelled blades represents the pinnacle of kitchen knife craftsmanship in Sakai.
Longer and thicker in comparison to our White #2 Petty. The Kurouchi scale is a result of Nakagawa-san's process, rather than a parkerised finish. Preserving the scale on the upper part of the blade, Nomura-san shaped very even bevels ground to a thin edge. Although the edge is rather thin, the overall robust grind of this petty allows it to handle tasks that a more delicate and thinner petty might struggle with.
