
Hitachi Gin 3 clad in soft stainless steel made by Satoshi Nakagawa and Makoto Tadokoro. Gin 3 is one of the most popular steels coming out of Nakagawa's workshop, being both easy to maintain and easy to hone to a keen edge.
Makoto Tadokoro began his career as a kitchen knife sharpener at a young age. He learned the foundations of his craft under Morimito Hiromi (Morihiro) in Sakai. He has since ran his own independant workshop based in Tosa for the last 20 years. His preferred style for double bevels is the laser shinogi, and his work has a close affinity with that of his master.
Compared to Tadokoro san's usual offerings, these Gin 3 gyuto come with extra height, allowing the thin wide bevel grind even more room to shine. These are excellent daily drivers for all kitchens.
