Hollow forged 52100 by Brook Turner from Sydney, Australia. Full time radiographer, and part time knife maker. Brook has worked with a variety of steels and materials to create many different blade profiles in different constructions. The quality of his work would suggest that he has been forging and grinding knives full time for many years. An accomplished bladesmith and woodworker with a great eye for aesthetics.
Brook customised a couple of press dies for slightly hollow forged blades. This gyuto has been forged with a gentle distal taper for a thin tip area and acutely ground primary bevels. In combination with the forged hollow and texture, it combines ease of penetration and nice food release. Paired with a simple charred oak handle for comfortable balance and a lovely look and feel.
