Craig Maher operates a small workshop located about 2 hours north of Sydney city. With over a decade of blacksmithing and grinding expertise, Craig produces a variety of beautiful cooking knives and other kitchen tools. Highly experienced in handling a variety of steel and material for fittings, his work has found a home at many great restaurants around Australia.
This Sakimaru has been crafted from Takefu Shiro 2 with a Suminagashi cladding. It was forged and ground with a slight sori, has a sturdy spine with a thin tip, and is completely stiff. The weight, edge profile and convex bevels combine perfectly for portioning, carving and slicing cooked or raw proteins. A stag antler handle with brass ends completes this elegant piece.
Takefu's Shiro 2 is a fine grained alloy which is very easy to resharpen and has good slicing retention.
