Travis McLean runs Lucid Knives located in Hunter Valley, New South Wales. Travis began making knives for his own use during his kitchen career. He acquired the skills and equipment to work with high end blade material, and he continues to hone his craft.
Travis' preference for a gyuto is to make a workhorse style performer, and this one is no exception. It features a Sheffcut core clad in a slaggy layered wrought iron. A gyuto on the heavier side with a full convex grind, nice distal taper, and a thin edge, this is one is designed for long hours of cutting.
Sheffcut is a fairly recently developed steel that was released in 2022. Performance is very similar to 26c3 which has become a firm favourite amongst many. It combines ease of sharpening, fine teeth and good edge retention.
