A brand with a long history for swords, tools and knives, Matsubara Hamono's origins trace back to the late 15th century. Now operated by Katsuto Tanaka, the 4th generation blacksmith of a family who earned their living by making sickles and other tools. The style of Matsubara's kitchen knives has evolved a lot over the recent years, we believe his current iron clad White 1 Kurouchi series to be among his best work for geometry and finish. These Nakiri are ground slightly thicker at the heel area than the rest of the blade which is very thin, making it a great tool for any vegetable preparation. The heat treatment of the White 1 core steel allows this knife to take a very keen edge with ease.
