Hitachi Aogami Super and iron cladding forged by Yoshikazu Tanaka. Undoubtedly one of the most revered blacksmiths, Tanaka-san's mastery of heat treating steel is loved by many users around the globe.
I found Tanaka-san's AS steel to be noticeably less brittle than a lot of other AS knives I have experienced. But still with the crisp keenness in line with his high standards, as well as the great edge retention expected from this steel.
Slightly larger dimensions than standard Sakai specifications, as well as a very well executed thin convex grind. A formidable performer with great balance. The blade has been finished to a simple high contrast Kasumi.
