Hitachi Blue #1 core and soft iron cladding. One of the best Japanese cutlery steels forged by Yoshikazu Tanaka of Sakai City. Undoubtedly one of the most revered blacksmiths, Tanaka-san's mastery of heat treating steel is loved by many users around the globe.
This large cleaver has been ground to a thin convex grind by the renowned Kawakita Hamono. The edge profile features a very gentle curvature to allow for smooth dicing, chopping and slicing.
We were very lucky to be able to obtain the first full sized cleavers made with Blue #1 steel in Sakai.
This cleaver is designed for vegetable and boneless protein preparation, the geometry is far too thin to be used as a butcher's cleaver.
