Hitachi Blue #1 core and soft iron cladding. One of the best Japanese cutlery steels forged by Yoshikazu Tanaka of Sakai City. Undoubtedly one of the most revered blacksmiths, Tanaka-san's mastery of heat treating steel is loved by many users around the globe.
This full convex version of our Blue 1 Gyuto has been sharpened by Shuji Yamaguchi. From a slightly younger generation than the sharpeners of our other knives, Yamaguchi-san still has over 30 years of experience as a knife maker at the top level. His workshop is highly regarded for grinding forged blanks from some of the most renowned blacksmiths in Japan, and he has been consistently producing the highest quality kitchen knives for several famous brands over the years.
A symmetrical convex grind, with an acute hamaguri edge. Yamaguchi-san decided to mirror finish these blades, and tarnish the portion where the hamaguri bevels start. A nimble Gyuto with a thin tip area that perfectly balances penetration and release.
A Gyuto by two masters of their craft, in a very practical size and profile. Tanaka-san's Blue #1 takes and holds an incredible edge with great tactile feedback on whetstones.
