This tall gyuto has been sharpened by Shuji Yamaguchi. With over 30 years of experience as a knife maker at the top level, his workshop is highly regarded for grinding forged blanks from some of the most renowned blacksmiths in Japan, and he has been consistently producing the highest quality kitchen knives for several famous brands over the years.
A larger blade with an acute full convex grind designed to be a multi tasker for all kitchens. Finished to a burnished kasumi, giving the blades a natural elegance by balancing a light contrast with a bit of reflectivity which will take a vivid patina.
