This water quenched Honyaki Gyuto in Hitachi White #1 is the first of our offerings from this incredible bladesmith based in Kyushu, south west Japan. Having mastered both forging and grinding in multiple workshops, his knives today are a combination of all his experience and talent. Currently in his late 50s, he crafts blades in small batches under his own label Minamoto Yasukuni.
All the blade work - forging, grinding, finishing and even kanji are done by Minamoto Yasukuni himself.
This particular Gyuto has a mild degree of sori from the water quench, the gradual curve starts from the tang. It boasts a thin convex grind with a very slight right handed bias. Blade finish is a simple semi-mirror with a gentle hazy appearance on the hardened steel - a gratifying finish that highlights his organic wavy hamon.
It's commonly agreed by those who are familiar with this maker's work that his Aogami and Shirogami knives take a very aggressive toothy edge, and this Gyuto is no exception.
