White #1 Mizu Honyaki forged and differentially heat treated by Satoshi Nakagawa. Nakagawa-san rose to fame as the protégé of the great Kenichi Shiraki, and in more recent years has taken up the mantle of this esteemed blacksmithing workshop. Nakagawa-san has honed his skills to be able to work with a wide range of steels, profiles and constructions - and has earned his well deserved reputation for forging and heat treating top quality blades.
A larger Gyuto with a distinct high convex grind tapering towards a thin edge, designed to perform flawlessly on a variety of produce. A weighty but well balanced feel with a very practical edge profile.
This blade has been finished with a progression of natural finger stones exposing some great hamon activity as well as the beautiful grain structure of the steel. Nakagawa-san's White #1 is very responsive on stones and takes an extremely keen edge.
