Hitachi White #1 Steel and soft iron cladding, forged by Satoshi Nakagawa, one of Sakai City's busiest and most well regarded blacksmiths. Nakagawa-san has honed his skills to be able to work with a wide range of steels, profiles and constructions - and has earned his well deserved reputation for forging and heat treating top quality blades.
A narrow and stiff blade with Kawakita-san's much loved hamaguri geometry - in combination with the ideal edge profile for slicing raw and cooked proteins. A classic finish done with Arato powders by this legend of Sakai's knife making industry.
Nakagawa-san's White #1 takes a super keen and bitey edge and is very responsive on whetstones. This White #1 Sujihiki replaces the previously released White #2 variant.
