White #2 forged and differentially heat treated with a water quench by Satoshi Nakagawa. Nakagawa-san rose to fame as the protégé of the great Kenichi Shiraki, and in more recent years has taken up the mantle of this esteemed blacksmithing workshop. Nakagawa-san has honed his skills to be able to work with a wide range of steels, profiles and constructions - and has earned his well deserved reputation for forging and heat treating top quality blades.
A larger convex ground Gyuto designed to perform flawlessly on a variety of produce. A thin edge and well balanced feel with a very user friendly profile.
This blade has been finished with a progression of natural finger stones giving it a clean and simple polish that will be easy to maintain compared to many other Honyaki knives which are mirrored with high speed buffers and compounds. The tight knit wavy structure of the steel can be seen lightly. It has an almost kitae hada-esque aesthetic from certain angles, though of course this is alloy banding and not hada.
It is difficult to tell from the photos, but the grind for this Gyuto was done to give the heel area a little more convexity than the rest of the edge.
Because this blade was forged a couple of years ago, it still has the old "Shiraki-saku" stamp on the tang.
