White #2 Mizu Honyaki forged and differentially heat treated by Satoshi Nakagawa. Nakagawa-san rose to fame as the protégé of the great Kenichi Shiraki, and in more recent years has taken up the mantle of this esteemed blacksmithing workshop. Nakagawa-san has honed his skills to be able to work with a wide range of steels, profiles and constructions - and has earned his well deserved reputation for forging and heat treating top quality blades.
The grind of this larger Gyuto was executed by Shotaro Nomura, one of the most sought after sharpeners in Sakai City. Nomura-san has shaped a perfectly balanced convex grind - very thin at the edge with a gradual curve up to the spine. The grind allows for effortless cutting and great food release. Sufficient weight and a thin edge enable the user to have the best experience of a Gyuto made with Nakagawa-san's fine grained water quenched Honyaki.
