White #2 Mizu Honyaki forged and differentially heat treated by Satoshi Nakagawa. Nakagawa-san rose to fame as the protégé of the great Kenichi Shiraki, and in more recent years has taken up the mantle of this esteemed blacksmithing workshop. Nakagawa-san has honed his skills to be able to work with a wide range of steels, profiles and constructions - and has earned his well deserved reputation for forging and heat treating top quality blades.

A stiff slicer with a notable convex geometry in combination with a thin edge. A grind designed to cleanly slice raw or cooked proteins as well as eliminating the need to hold the cut piece down or having to peel it off the blade - potentially preserving the integrity of the ingredient and minimise movements. The user friendly profile functions well for vertical, angled or horizontal cuts. Suitable for delicate presentations or portioning larger boneless cuts.

The blade has been finished with a progression of natural finger stones. Nakagawa-san's wavy hamon shines brightly with some utsuri and wispy ashi revealed. Some of the activity of the steel's structure has begun to show on the surface creating a misty specular effect. The steel feels very responsive when sharpening and can be taken to an incredibly keen and fine edge with ease.
