Hitachi White #2 Steel and soft iron cladding, forged by Satoshi Nakagawa, one of Sakai City's busiest and most well regarded blacksmiths. Nakagawa-san has honed his skills to be able to work with a wide range of steels, profiles and constructions - and has earned his well deserved reputation for forging and heat treating top quality blades.

The grind and elegant finish of this petty has been executed by the admirable Kawakita Hamono, who continues to produce blades of the highest esteem.

A thin and stiff petty designed for both on and off the board work. The narrow, pointy tip functions well for scoring ingredients. The heel is at a comfortable height for this petty to be used for handheld preparation as well as for delicate dicing jobs.

Kawakita Hamono finished this petty with a parallel scratch pattern followed by Arato powders, to create a darkish matte iron cladding and exposing Nakagawa-san's lamination line.

Excellent petty

I am a big fan of the various Migoto white steel knives sharpened by Kawakita. This is no exception. Great profile and grind. Middle weight petty that is thin behind the end but not delicate. Takes a great edge too. If I had to provide any negative it is that the handle is not as beautiful as the handles on the other Migoto offerings (according to my taste at least).
