Hitachi White #2 Steel and soft iron cladding, forged by Satoshi Nakagawa, one of Sakai City's busiest and most well regarded blacksmiths. Nakagawa-san has honed his skills to be able to work with a wide range of steels, profiles and constructions - and has earned his well deserved reputation for forging and heat treating top quality blades.
The grind and finish of this sujihiki has been executed by the admirable Kawakita Hamono, who continues to produce blades of the highest esteem.
A narrow, stiff and convex ground slicer with a subtle hamaguriba edge. A suitable grind in combination with an ideal edge profile for slicing, this knife is designed specifically to excel at processing raw and cooked protein.
Kawakita Hamono finished this sujihiki with a parallel scratch pattern followed by Arato powders, to create a darkish matte iron cladding and exposing Nakagawa-san's lamination line. The blade is fitted with a Wenge handle, which is somewhat uncommon for Japanese knives - the resulting aesthetic is very pleasing as well offering great balance and comfort.
