
Iron clad Hitachi White #2 forged and heat treated by Yoshikazu Tanaka of Sakai, Japan. Ground, finished and dressed by Will Newham in Tasmania, Australia.
The duo we needed. This gyuto was made to "standard" Sakai 240mm gyuto dimensions.
A nimble blade with a slight fullered grind on both sides of the hira, giving it some added release. Although it is overall thin at the spine, it has that feel of notable distal taper where it is front balanced in hand, but extra light when using the tip. Will paired this blade with a sculpted Gidgee handle.
This will be an ongoing series with the next releases being in a different size and steel.
