Under his own label "the nine", Australian bladesmith Robert Trimarchi creates knives and other kitchen tools out of his humble workshop. Over the years, his knives have gained a reputation for excellent performance, a unique aesthetic, and a great degree of practicality and longevity. Each one of Robert's knives are made by himself from start to finish - from forging, heat treating, grinding, and crafting the fittings.

Forged from a billet of 1084 & 15n20 that Robert forge welded last year, this gyuto is another masterpiece from one of today's most exceptional makers. The damascus pattern is from the bar being forged in from the side orientation rather than the initial top and bottom.

A semi integral bolster combined with a very thin tip region gives this blade an aggresive distal taper. Full convex ground down to a very thin edge. Thin, but still stiff and with profile that has a continuous curve ideal for all round prep and every day use. Balance point is around the neck for a very nimble feel.

The blade is seamlessly fitted with an Ancient Red gum handle. The handle can be removed for re etching in the long term. A brass screw secures the butt of the handle.

This blade is shipped with a little tool made for the screw. As they are made out of brass and not steel, the tool should be used with a slightly gentle touch and only for the initial loosening or final tightening of the screw.

(Handle opening will be sealed with wax before shipping)
